INGREDIENTS
- ½ cup shredded carrots
- ½ cup boiling water
- ½ cup oats and wheat bran
- 2 Tbsps. flax seeds (freshly grounded)
- 1 tsp, garlic powder
- ½ tsp. crushed sage or fennel seeds
- ¼ tsp. sea salt
- 2 stalks scallion
- 2 tsps. maple syrup
- ¼ cup pecans or walnuts (grounded in blender)
- 1 tsp. black strap molasses
- ¼ tsp. fresh thyme leaves
DIRECTIONS
- Stir together flax seeds and boiling water and set aside to soak for 5 minutes.
- Add oats, bran, shredded carrot, nuts, and dry spices. Stir to combine.
- Add scallion and thyme with all other ingredients – mix well.
- With your hands, form mixture into ½” thick patties. Heat oven to 350°F.
- Lay patties on a stainless-steel baking sheet (or place parchment paper over your regular baking sheet).
- Bake patties for 15 minutes on one side, then flip and bake until the other side becomes golden brown.
If you don’t have an oven, the patties can be done on the stove top as follows:
- Heat a quarter inch of olive or coconut oil in a cast iron pan.
- When oil is hot, fry patties for a few minutes on each side, until golden; adding more oil each round as necessary.
- Serve warm with whole grain bread, roasted breadfruit, or a vegetable salad.
