GREEN JACKFRUIT CURRY

The following recipe comes from Dr. Debs’ healthy vegetarian kitchen.

Hi everyone, I went to a church on Sabbath to do a health presentation, and got the most beautiful large jackfruit as a gift. However when it was cut open, it was green…what to do?Here is where creativity comes in, in the healthy vegetarian kitchen…try a dish…so I did…and here is the result…it is delicious!

Ingredients:
•½ cup of sliced young/green jackfruit
•3 tablespoons coconut oil
•2 cloves garlic (minced)
•1 small onion (diced)
•2 stalks scallion (diced)
•1 sprig of thyme leaves
•½ of a small ripe bell pepper (sweet pepper) – diced
•1 small ripe tomato (diced)
•¼ to ½ teaspoon sea salt
•2 teaspoons turmeric power (more if you like)
•½ tsp coriander powder
•¼ tsp Sage powder
•1 tablespoon honey (optional)
•¼ cup of water
•¼ tsp grated ginger
•Dash of cayenne pepper (optional)

Directions: Turn on your stove to medium heat, then place your stainless steel or glass pot on and add the oil. Allow it to get warm but not too hot, next add onion, garlic, scallion, tomato, bell pepper. Sauté for approximately 1-2 minutes, then add in the sliced jackfruit. Stir to combine and then add the ginger, cayenne pepper, honey, salt, thyme, coriander and sage powders and stir. Add water and cover the pot.

Allow 5-6 minutes cooking time at medium heat or until the water has been absorbed and the fruits are all tender and there is a gravy consistency – enjoy with your roasted breadfruit, sweet potato, homemade bread or steamed brown rice.
