INGREDIENTS
- 1 large green plantain (with skin as this will thicken the porridge without any need to add oats flour or any other flour)
- 1 cup pure water
- 1 cup coconut milk
- 1/4 tsp salt
- 2 cinnamon leaves
- ¼ tsp. coriander powder (optional)
- Toppings: organic raisins, nuts, seeds, fruits, coconut flakes
DIRECTIONS
1. Wash and slice green plantains in about 1-inch pieces. Place in blender with 1 cup water and blend until smooth (if you are using coconut pulp, blend with the plantains)
2. Pour into pot on low heat and add cinnamon leaves. Once it starts to boil, keep stirring with a large spoon to prevent lumps.
3. Boil for 10-15 minutes, then add coconut milk, salt and coriander powder.
4. Coriander is used as a substitute for cinnamon bark powder, which we don’t use in our general cooking because it lowers the blood glucose drastically. However, it is used if this porridge is being made for a diabetic.
5. Boil for another 5-7 minutes, then turn off stove and remove cinnamon leaves.
6. Sweeten to taste using honey or maple syrup.
7. Serves two.
